Watermelon salad



This salad is an excellent source of vitamins C and A and beta-carotene. Watermelon is refreshing and hydrating, and pink is also packed with the potent carotenoid antioxidant lycopene. This powerful antioxidant travels through the body neutralizing free radicals. 

Ingredients:
2 cups watermelon, cut into bite-sized cubes after the rind has been removed
2 cups arugula, julienned
1⁄4 cup jicama, peeled and chopped into small dice
1 tablespoon raw pumpkinseeds, soaked overnight

Directions:
Add all ingredients to a medium bowl with dressing and toss to combine.
